Healthy Cookies?

Yes, it's possible to have (semi) healthy cookies. Notice the chia seeds and oats next to their friends, the chocolate chips? Yeah, me neither. It's almost like these cookies are bad for me...

Ingredients:

  • 1/2 C. peanut butter

  • 2 T. honey

  • 1 t. vanilla extract

  • 1 egg

  • 1/2 t. baking soda

  • 1/2 t. cinnamon

  • 1/4 t. salt

  • 1/4 C. chocolate chips

  • 1 T. chia seeds

  • 1/2 C. rolled oats

Directions:

  • Preheat oven to 350 degrees.

  • In a large bowl, combine peanut butter, honey, vanilla, and egg until smooth.

  • Add baking soda, cinnamon, salt to the sticky mixture.

  • Fold in chocolate chips, chia seeds, and oats. Be careful of over mixing.

  • Roll dough into small balls and press into round disks on baking sheet with the palm of your hand.

  • Bake for 8 minutes, cool, and enjoy!
